Summer Time Nom-Noms

Been making this frequently this summer--heirloom tomatoes are in full effect. If you come over you are sure to see a basket full of fresh fruits and veggies.

Summer x The Freshness of Ciabatta

This heirloom tomatoe, cucumber, avocado, feta cheese and fresh bread salad is my absolute favorite summertime snack/salad. It has a champaigne vinegarette and the $10 spent on the vinegar was well worth it!

Here's the recipe:

Dish

2 medium heirloom tomatoes
1 medium avocado
1 large cucumber
1 loaf of ciabatta or pugleise bread
4 oz feta cheese

Method

chop tomatoes, avocado, cucumber and bread in to sizable chunks and toss with the feta cheese and the champaigne vinegarette in a large bowl. Serve immediately.

Champaigne Vinegarette Dressing

1 each shallot -- Quartered
1 small Garlic clove -- pressed
1 Tablespoon Dijon mustard
2 Tablespoons sugar/or spenda equivalent
1/8 teaspoon kosher salt
1 dash freshly ground white pepper
1/2 cup Champagne vinegar
1 1/2 cups Canola oil (or olive oil will do)

Mix all of the above mentioned salad dressing ingredients in a blender adding the canola oil slowly at the very end.*
1. Refrigerate for at least 2 hours to meld the ingredients. Pour over salad ingredients.
*Mix all ingredients a day ahead and store in covered jar. Keeps very well.


I promise you this will impress and satisfy.
